Why do the names of things change over time?

For example, waitress is now server, stewardess is now flight attendant, mentally re-tarted is now mentally handicapped(retard is a synonym of handicap), midget is little person and etc, changing the name doesn't change the thing. You change child rapist to person who takes incident liberties with a minor or something and guess what they're still a child rapist.
